Abstract

Domba merupakan komoditas ternak penghasil daging yang potensial. Tujuan penelitiam ini untuk mengetahui  persentase karkas dan non karkas (kepala, kulit, kaki, offal hijau , offal merah) dengan vareasi bobot domba jantan local.  Penelitian ini dilakukan dengan menggunakan total delapan domba jantan,  dengan bobot potong 26,7 kg, 26,2 kg, 26 kg, 29,5 kg, 28,7 kg,26 kg, 22 kg, 27 kg.  Hasil penelitian menunjukkan bahwa persentase karkas domba  yaitu : 40,67 %, 40,45 %, 42,15 %, 40,54 %, 39,23 %,37,7 %, 33,0 %, 39,5 %. dan persentase non karkas domba ; untuk persentase bobot kepala: 9,13 %, 9, 46 %, 10,76 %, 9,22 % , 8,1 %, 9, 15 %, 9,90 % , 7,33 %, persentase bobot kulit:  8,01 % , 7,25 %, 7,61 %, 7,72 %, 8,43 %, 8,23 %, 8,00 %, 10, 96 %,  persentase bobot kaki: 2,47 %, 2,59 %, 2,84 %, 2,23 %, 2,16 %, 2,69 %, 2,81 %, 2,29 %.  Bobot potong yang meningkat menghasilkan persentase  karkas dan non karkas yang besar
